An Old Fusion Recipe: Sultan Fatih's Favorite Mutancana


Ingredients

 

750 gr of lamb meat

1 glass of red grape

15 shallots

1 tea cup peeled raw almonds

4-5 dried figs

2 tbsp honey

3 tbsp butter

2 glasses of water

A pinch of flour

2 tsp sumac

2 tsp salt

 

How to cook

Melt the butter in a deep pot. Add the cube chopped lamb meat. Roast the meat until it releases and soaks back its water. Add the shallots to the pot and cook for a few more minutes. Sprinkle one or two pinches of flour and roast for a few more minutes. Add hot water and cook it on high degree. Add the red currant, honey, sumac and salt 5 minutes before you take the pan from fire. Finely slice the pre-boiled and peeled almonds dried figs. Roast them for a few minutes in a pan and add on the top of the plate while serving.

 

This is nearly 570 years old dish, enjoy it.



 

 

Mehmed The Conqueror

1432-1481

II. Mehmed is the seventh sultan of the Ottoman Empire. In historical sources, the name of the other sultans as Mehmed, Muhammad. It first ruled for a short period between 1444-46, and then from 1451 to its death in 1481 for 30 years. At the age of 21, Mehmed II conquered Istanbul and ended the 1,000-year-old Byzantine Empire and this event was accepted by many historians as the beginning of the New Age in the late Middle Ages.
