Mehmed The Conqueror
II. Mehmed is the seventh sultan of the Ottoman Empire. In historical sources, the name of the other sultans as Mehmed, Muhammad. It first ruled for a short period between 1444-46, and then from 1451 to its death in 1481 for 30 years. At the age of 21, Mehmed II conquered Istanbul and ended the 1,000-year-old Byzantine Empire and this event was accepted by many historians as the beginning of the New Age in the late Middle Ages.

Mutancana is a characteristic meat dish of Edirne Cuisine. It was one of the favorite dishes of Fatih Sultan Mehmet, who was born in Edirne Palace and one of the main recipes that was brought to the kitchen of Topkapı Palace following the conquest of Istanbul. Mutancana’s recipe is pretty similar to Zirva, another special dish of Edirne Cuisine. In the recipe of Mutancana just like Zirva, we see the combination of meat and fruit, sweet, sour and salty aromas due to the practices in Ottoman dishes. Although the original recipe was made with lamb meat, in the following years, this dish is also prepared with chicken meat. Mutancana is one of the leading recipes of the concept kitchens presenting examples of Ottoman Cuisine in our day, while it is still alive in the local Edirne cuisine.
